It was my little fur baby, Lilly's 6th birthday yesterday so I made some doggie cupcakes! I omitted the carrot because Lilly hates carrots lol. Even my husband loves them! lol INGREDIENTS 1 Cup Flour 1 Tsp Baking Soda 1/4 Cup Shredded Carrot 1/4 Cup Peanut Butter 1 Tsp Vanilla 1/3 Cup Honey 1/2 Cup Vegetable Oil 1 Egg FROSTING 8 oz Whipped Cream Cheese 2 Tsp Cinnamon 1 Tsp Vanilla (Combine all until well blended) DIRECTIONS Preheat oven to 350F. Combine flour and baking soda. Add all other ingredients and combine until blended. Grease muffin tin, fill 6 cups and bake until light golden brown or until toothpick placed in center comes out clean. Approx 20 mins. Cool completely and frost with cream cheese mixture. Top with your doggies favorite treat!

This is a Cracker Barrel copycat recipe I made the other night to give my husband some flavor and variety, as I'm on a plain chicken food plan this week... Easy recipe and yummy! I served mine with sweet potato, asparagus and some Trader Joe's harvest grains. Tasty! INGREDIENTS 6 Chicken Tenderloins 1/2 Cup Zesty Italian Dressing 1 Tsp Lime Juice 2 Tsp Honey DIRECTIONS
In a large ziplock bag add dressing, lime juice and honey; mix to combine. Add the chicken and mix to coat all pieces. Marinate in the fridge for 1 hour. Remove chicken from refrigerator and add to a large skillet (marinade and chicken). Braise the tenders until they are golden brown in color but not dry. After it comes to a boil, reduce the heat to low-medium and continue cooking. Simmer until all the liquid has cooked down and there is just a glaze left in the pan. Remove and enjoy! I know, I know, everyone is sick of "pumpkin spice" everything by now haha, but not me! I soak up every minute of pumpkin season! Here's another simple and yummy one... INGREDIENTS 1 1/2 Cups Flour 2 1/2 Tsp Pumpkin Pie Spice 1 Tsp Baking Soda 1/2 Tsp Salt 1/4 Tsp Baking Powder 1 Cup Sugar 2 Large Eggs 1/4 Cup Vegetable Oil 1/4 Unsweetened Apple Sauce 1 Cup Pumpkin Purée 1/3 Cup Water DIRECTIONS Preheat oven to 350F Line muffin tin with paper liners or spray with cooking spray. In a medium bowl whisk together flour, spice, baking soda, baking powder and salt. In another bowl combine sugar, eggs, oil, apple sauce, pumpkin and water. Stir in dry ingredients until combined. Fill muffin tins 2/3 full and bake for 20 to 25 minutes. Let cool in tin for 10 minutes then remove to cooling rack. Enjoy! Simple, tasty, pretty healthy... Okay, okay the butter isn't great but overall a healthy meal! INGREDIENTS 2 Tbsp Butter 2 Cloves of Garlic, Minced Salt & Pepper Pinch of Parsley Dash of Paprika DIRECTIONS Preheat oven to 350 F In a small saucepan combine butter, garlic, salt, pepper, parsley and paprika and heat until butter is melted. Foil line a shallow baking pan, lined with tinfoil, and brush butter mixture on the tilapia fillets. Bake for 12-15 minutes or until fish flakes easily with a fork. My Favorite time of year is here! (other than Christmas of course) and I'm stoked to be baking with pumpkin again!

Still very yummy but just missing... something... :) INGREDIENTS 3 1/2 Cups Flour 1/4 Tsp Baking Powder 2 Tsp Baking Soda 1 Tsp Nutmeg 1 Tsp Cloves (Ground) 1 Tsp Cinnamon 1 1/2 Cups Brown Sugar (Packed) 1 1/2 Cups Sugar 1 Cup Oil 1 Can Pumpkin 4 Eggs 1 Cup Raisins or Nuts (Optional) DIRECTIONS Preheat oven to 350 F Combine all wet ingredients in one bowl; all dry ingredients in another Gradually add dry mixture to wet; just until combined Grease 2 - 9x5 loaf pans Divide mixture into the two greased loaf pans; bake for approx. 60 minutes Let cool for 5-10 minutes then remove from pan to cooling rack Top with icing once completely cooled ICING INGREDIENTS 1 Tbsp melted butter Dash of Milk 1 Cup Icing Sugar Add more icing sugar if necessary; if it's too runny. |
